Super yummy Lemon Curd, so easy, and ready in 10 minutes flat. This stuff is addicting, and you can put it on anything- ice cream, toast, pancakes, and of course, cheesecake!
Ingredients
- 60ml (1/4 c) lemon juice
- 2 tsp lemon zest
- 110g (1/2 c) sugar
- 50g (3 tbsp) butter
- 2 large eggs
Instructions
Whisk all ingredients together in a saucepan. Cook on medium heat, stirring constantly, until bubbles begin to appear around the edges of the pan. Remove from heat and pour into a glass container. Done!
Notes
- Stir constantly to get a silky-smooth texture. If it's still not as smooth as desired, quickly blend with an immersion blender after cooking.
- Cool to room temperature before spreading on a cheesecake.
- Lemon curd will become thicker once refrigerated. Stirring it will thin it out again.
